So, I had a mishap while making supper. I was cutting up an onion with a brand new knife. Well, guess what? Yep! I sliced my thumb.
Then, I was going to make some soap tonight. Hubby and the boys were gone, and I've been wanting to make some soap. Well, when I went to get my bucket of soap making supplies, my bottle of oil spilled. Ugh. I will need to clean it up, but I thought I should pamper myself a little.
So--I'm making cheesecake!!! Salted Caramel Cheesecake!!! YUM! (well, the fellas don't think so, but they don't like anything with cream cheese).
This is a 6 inch Fat Daddio Push Pan--I really like them WAY better than a springform pan. You line the bottom with parchment paper (optional, but I do it). Then, spray the bottom of the pan. Place your crust, and then the cheesecake.
I like to put a paper towel over the top of the cheesecake. Then, I cover that all with foil.
I make a sling--take a long sheet of foil, and fold it over. Place it under the pan, and lower it into the Instant Pot. The sling will help to pull the hot cheesecake out of the Instant Pot.
Place it in your Instant Pot--Manual, high pressure, for 35 minutes--make sure the vent is sealed.
Once it is done cooking, let the pressure naturally release. Then, open the pot, and use the sling to lift the pot out. Place it on a wire rack, and then once cooled, into the fridge.
I am also making a caramel sauce in my other electric pressure cooker, so I can pour it over the top of the Salted Caramel Cheesecake. YUM!!!
The Instant Pot is so wonderful for soups, chicken wings, cheesecake, Chicken Alfredo--all cooked, noodles and all in 1 pot, and a homemade hamburger helper--that is way better! I use it for many other things, this is just what I've made in it the last month.
The Instant Pot is an electric pressure cooker--but it is NOT like your mom or grandma's stovetop pressure cooker. I remember when my mom was making chicken noodle soup, and the valve blew, and we had chicken noodle soup raining down from the ceiling.
